Ingredients
2 medium sweet potatoes
1 tbsp plant-based butter
1/8 tsp allspice
1 (15 oz) can chickpeas, drained & rinsed
2 tsp dry jerk seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
2 tbsp olive oil, divided
1 bunch curly kale, rinsed and dried
1 tbsp lemon juice
1 healthy pinch sea salt
Kula Scotch Bonnet BBQ Sauce, to taste
Directions
1. Roast the Sweet Potatoes
Preheat oven to 425°F. Poke holes all around the sweet potatoes with a fork and place them on a lined baking sheet. Roast for 40–50 minutes, until fork-tender and puffy. Let cool slightly before handling.
2. Sauté the Jerk Chickpeas
In a skillet, heat 1 tbsp olive oil over medium heat. Add chickpeas, jerk seasoning, garlic powder, onion powder, and smoked paprika. Sauté for 2–3 minutes, stirring occasionally, until fragrant and slightly crispy.
3. Massage the Kale
Strip the kale leaves from stems and chop finely. In a bowl, drizzle with lemon juice and remaining olive oil. Massage for 3 minutes to soften and infuse flavor. Season with sea salt and set aside.
4. Assemble the Stuffed Potatoes
Slice each sweet potato lengthwise and gently open with a fork. Add a dab of plant-based butter and a pinch of allspice. Layer in the massaged kale, then top with jerk chickpeas.
5. Sauce It Up
