Combo 1: West African Vibes – Suya, Jollof Rice & Vitamalt
Main: Nigerian Suya Skewers (Beef or Chicken)
Ingredients:

1 lb thinly sliced beef or chicken

2 tbsp vegetable oil
-
Bamboo skewers (soaked in water)

Sliced onions and tomatoes for garnish
Instructions:

Preheat grill to medium-high.
-
Mix suya spice with oil to form a paste. Rub generously onto meat slices.

Thread meat onto skewers and let marinate 30 mins (or overnight for max flavor).

Grill 4–6 minutes per side until charred and fully cooked.

Serve hot with sliced onions and tomatoes on the side.
Tip: For authentic taste, sprinkle more dry suya spice on top after grilling.
Side: Coconut Jollof Rice
Ingredients:

1 jar Taltis Jollof Sauce
-
1.5 cups coconut milk
-
2 cups stock (beef, chicken, or veggie)

3 cups parboiled rice
-
Salt to taste
Instructions:

Combine sauce, coconut milk, and stock in a pot; bring to a boil.

Add rice and reduce heat to low. Cover and simmer 20–30 minutes.

Fluff with a fork and adjust seasoning.
Drink: Vitamalt Chilled
A Caribbean classic, Vitamalt is a non-alcoholic malt beverage rich in flavour and B vitamins. Serve it ice cold with a lime wedge for a grown-up vibe.

Combo 2: Caribbean Comfort – Oxtail, Ham Sliders & Green Ting
Main: Slow-Cooked Caribbean Oxtail with Yawdi’s Jerk Marinade
Ingredients:

2.5 lbs oxtail, cleaned
-
½ cup Yawdi’s Jerk Marinade
-
1 onion, chopped
-
2 cloves garlic, minced
-
2 carrots, chopped
-
1 tbsp brown sugar
-
1 tbsp soy sauce
-
2 cups beef stock
-
1 can butter beans (optional)
Instructions:

Marinate oxtail in Yawdi’s overnight if possible.

Sear oxtail in a hot pot until browned. Remove and set aside.

In the same pot, sauté onion and garlic. Add carrots, sugar, and soy sauce.

Return oxtail to pot. Add stock and bring to a boil.

Simmer for 3 hours, adding beans in the last 20 minutes.
Serve tender oxtail over steamed rice or alongside warm bread.
Side: Mini Ham & Mango Pepper Jelly Sliders
Ingredients:

Slider buns

Sliced deli ham or roast ham

Arugula or baby spinach
Instructions:

Toast slider buns lightly.

Spread mango pepper jelly on both sides.

Layer ham and greens, close buns, and secure with toothpicks.

Combo 3: Guyanese Goodness – Chicken Curry, Coconut Rice & Pink Ting
Main: Guyanese Chicken Curry
Ingredients:

2 lbs chicken (bone-in preferred)

1 tsp ground cumin

1 onion, chopped

1 tomato, chopped

1 scotch bonnet pepper, sliced

3 cloves garlic, minced

1 tbsp oil
-
½ cup water

Salt to taste
Instructions:

Season chicken with salt and half the curry powder. Set aside.

In a pot, heat oil and add onions, garlic, cumin, and remaining curry powder.

Add tomato and cook until soft. Add chicken and cook until browned.

Pour in water, cover, and simmer until chicken is tender (30–45 min).
Add scotch bonnet near the end for that real Caribbean kick!
Side: Plain Coconut Rice
Ingredients:

2 cups jasmine rice
-
1 can coconut milk
-
1 cup water

Pinch of salt
Instructions:

Rinse rice until water runs clear.
-
In a pot, combine rice, coconut milk, water, and salt.

Bring to boil, then reduce to simmer for 15–18 minutes, covered.

Let steam for 5 minutes before fluffing with a fork.
Pairs beautifully with spicy curry.
Drink: Pink Ting (Ting with a splash of fruit punch)
